Paneer Malai Kebab - Paneer Zafrani Pulao | Vahchef - VahRehVah

PANEER MALAI KEBAB
INGREDIENTS:
Milk - 500 ml
Red chilli flakes - 2 tsp
Cumin seeds - 1 tsp
Salt - As Per Taste
Vinegar - 1 tsp
Potato - 3 nos
Hung Yogurt - 3 tsp
Cheese - 1 cup
Cream - 2 tsp
Pepper powder - 1 tsp
Green chillies - 3 no
Ginger garlic paste - 1 tsp
Cardamom powder - 1 tsp
Capsicum - 1 no
Cashew Nuts - 15 nos.
Basmati Rice (soaked)- 1 cup
DIRECTIONS:
Boil milk in a pan,and then add vinegar to curdle the milk, then add chilli flakes, cumin seeds, salt to the curdled milk.
Take a muslin cloth strain the water and separate the milk solids and keep aside for 20 minutes. After that cut it into cubes. And homemade paneer is ready.
Take a pan and pour the strained water of paneer, Now potato pieces and cook it till it is 50% done and keep aside.
Now take grated cheese in a bowl, hung yogurt, cream, pepper powder, finely chopped green chillies, ginger garlic paste, cardamom powder and mix it well so that it turns into a fine paste.
Then to that paste add some salt, boiled potatoes, paneer cubes mix it well. Now add capsicum pieces, onions mix it well and arrange all the paneer cubes capsicum and onions on the skewers alternatively.
Now grill them in the oven at 180 degree centigrade for 10 minutes on each side.After 20 minutes of cooking the kebabs are ready and now finally add some butter on top of it and is ready for serving.
PREPARATION OF PULAV:
Heat the oil in a pan, and now add cumin seeds, cashew nuts, onions, salt, mint leaves, green chillies saute it till the colour is slightly changed.
Then add paneer stock and bring it to a boil and now add soaked basmati rice to it and cook it . At last, add some saffron water cook it for 2-3 minutes. switch off the flame.
Now ready paneer pulao with paneer kebab is ready to be served.
