Pulao are often made at home be it Vegetable pulao or Peas pulao. They are easy to make and have to be served with a raita, veggie salad or gravy.
Paneer Pulao is a quick and easy recipe yet it is a delicious meal. This is a satisfying meal and it serves as a great lunch box recipe. If you don't have the vegetables at hand you can skip it, it will not alter the taste of the pulao. Serve paneer pulao hot garnished with some mint or coriander leaves and a few pan fried paneer cubes. You can also serve cucumber raita or onion tomato raita. This paneer rice dish would also go equally well with dal fry or dal tadka.

Number of Servings: 4-5 persons

Note -
* Use basmati rice for more flavour. However, paneer pulao can also be prepared with leftover rice.
*Add 1 tsp lemon juice at the end to enhance its flavour.

Ingredients
------------------
Paneer - 200 gms
Basmati rice -2 cup (rinsed and soaked in water for 15 minutes)
Onions - 2 nos ( thinly sliced )
Cumin seeds - 1 tsp
Carrots - 1/2 cup (2 nos)
Beans - 1/2 cup
Peas - 1/2 cup
Green chilli - 2 nos (slit)
Garlic - 1 tsp (4-5 cloves)
Ginger - 1 inch
Garam masala - 2 tsp
Oil - 6 tbsp
Ghee - 2 Tbsp
Mint leaves
Coriander leaves
Bay leaf - 1
Cardamom - 4
Cloves - 5
Pepper corns - 1/2 tsp
Cinnamon - 1 inch
Water
Salt

Method

1.Fry the paneer pieces till they are lovely golden color
2.Rinse & Soak the basmati rice for about 15 minutes
3.Heat a pressure cooker with some ghee, roast the whole spices
4.Add onions, ginger, garlic and green chilies and fry them
5.Add the vegetables and saute them
6.Add mint leaves and coriander leaves and saute them
7.Add salt & garam masala and the fried paneer pieces and mix well
8.Add the soaked basmati rice and add enough water and pressure cook it for one whistle
9.Serve hot with onion raita.
