Paneer Tiramisu |Sanjeev Kapoor Khazana

Cottage cheese replaces mascarpone cheese in this Italian delicacy.

PANEER TIRAMISU

Ingredients
200 grams cottage cheese (malai paneer)
1 egg
70 grams sugar
⅓ cup fresh cream
200 grams whipped cream
8-9 sponge fingers + for garnishing
2 teaspoons coffee powder
Syrup
20 ml rum
20 grams sugar
2 tablespoon coffee powder

Method

1. To make syrup, mix rum, sugar, coffee powder and forty ml boiling water in a bowl. Keep aside.
2. Beat the eggs and sugar together with an electric beater in a large bowl till creamy and smooth.
3. Beat the cottage cheese with the electric beater in another bowl till smooth. Add fresh cream gradually and mix again till smooth.
4. Add the beaten eggs and the sugar mixture to the cottage cheese mixture and fold into it.
5. Beat the whipping cream with an electric beater in a separate bowl and fold into the cottage cheese mixture.
6. Fill the paneer mixture into a piping bag.
7. To assemble the tiramisu, place sponge fingers on the bottom of individual serving glasses. Pipe three-fourth of the cottage cheese mixture over it. Sprinkle with some coffee powder.
8. Refrigerate for two-three hours.
9. Keep the remaining cottage cheese mixture in the refrigerator. Remove the glasses and pipe out remaining cottage cheese mixture till full.
10. Dust reserved coffee powder over the tiramisu. Garnish with sponge fingers and serve chilled.
