Panjiri Laddoo Festive Delights with Nutralite Janmashtami Special Sanjeev Kapoor Khazana

PANJIRI LADDOO

Ingredients

1 cups whole wheat flour (atta)
6 tbsps ghee
2 tbsps gum resin (gond)
1 cup puffed lotus seeds (makhana)
8-10 cashew nuts
8-10 almonds
2 tsps coriander seeds
1 tsp cumin seeds
2-3 tbsps melon seeds
2 tbsps white sesame seeds
A large pinch of dried ginger powder (saunth)
cup jaggery powder
cup Nutralite Choco Spread

Method

1. Heat 3 tbsps ghee in a nonstick pan. Add gum resin and cook till it puffs up. Drain and set aside.
2. Add puffed lotus seeds, cashew nuts and almonds to same ghee and saut for a minute or till the puffed lotus seeds turn crisp. Drain in a bowl and set aside.
3. Heat remaining ghee in the same pan. Add coriander seeds, cumin seeds, whole wheat flour and cook till the flour turns brown and fragrant.
4. Meawhile transfer the puffed lotus seeds mixture in a grinder jar. Add puffed gum resin, melon seeds and white sesame seeds and grind to a coarse powder. Transfer in a bowl.
5. Add the whole wheat flour mixture to the same bow. Add dried ginger powder, jaggery powder, Nutralite Choco Spread and mix well. Allow to cool slightly.
6. Divide the mixture into equal portions and shape into roundels.
7. Store in airtight container or serve.
