A beautiful and light steamed rice savoury pancakes.PANKIIngredients2 cups rice flour1 cup yogurt A pinch asafoetida (hing)¼ tsp turmeric powderA pinch of baking soda2-3 green chillies, chopped1 tbsp chopped fresh coriander leavesSalt to taste1 tsp ghee1 banana leaf, cut into 4 inch squaresOil for greasing Coconut chutney to serveMethod1. Heat sufficient water in a steamer. 2. Take yogurt in a bowl, add rice flour, asafoetida, turmeric powder, baking soda, green chillies, coriander leaves, salt and ½ cup water and whisk to form a smooth batter.3. To make one panki, grease two banana leaves with oil, pour a small portion of the batter on one leaf and spread into a small disc. Cover with the other greased banana leaf on top with the oil side facing down.4. Heat sufficient water in a steamer and place the pankis in the steamer basket and steam for 10-12 minutes.5. Arrange the pankis on a serving plate and remove the upper banana leaf before serving.6. Serve hot with coconut chutney.
