A beautiful and light steamed rice savoury pancakes.

PANKI

Ingredients

2 cups rice flour
1 cup yogurt
A pinch asafoetida (hing)
¼ tsp turmeric powder
A pinch of baking soda
2-3 green chillies, chopped
1 tbsp chopped fresh coriander leaves
Salt to taste
1 tsp ghee
1 banana leaf, cut into 4 inch squares
Oil for greasing
Coconut chutney to serve

Method

1. Heat sufficient water in a steamer.
2. Take yogurt in a bowl, add rice flour, asafoetida, turmeric powder, baking soda, green chillies, coriander leaves, salt and ½ cup water and whisk to form a smooth batter.
3. To make one panki, grease two banana leaves with oil, pour a small portion of the batter on one leaf and spread into a small disc. Cover with the other greased banana leaf on top with the oil side facing down.
4. Heat sufficient water in a steamer and place the pankis in the steamer basket and steam for 10-12 minutes.
5. Arrange the pankis on a serving plate and remove the upper banana leaf before serving.
6. Serve hot with coconut chutney.
