A unique south Indian prawn starter that is infused with molaga podi and coated with crispy and flavourful papadums.PAPADUM CRUSTED PRAWNSIngredients6-8 papadums8-10 jumbo prawns, cleaned, deveined and washed with tail intact½ lemon¼ tsp turmeric powderSalt to taste1 egg3 tbsps gun powder (molaga podi)Oil for deep fryingCurry mayo to serveMethod1. Take prawns on a plate, squeeze juice of lemon, turmeric powder and salt and mix. Set aside to marinate for 5-10 minutes.2. Add molaga podi and break in the egg and mix well. Set aside to marinate for 5-10 minutes.3. Finely shred and thinly chop papadams and place them on a plate.4. Roll each prawn over chopped papadams till well coated. 5. Heat sufficient oil in a kadai, slide in the prawns a few at a time and deep fry till golden brown and crisp. Drain on absorbent paper and transfer on to a serving plate.6. Serve hot with curry mayo.
