Parda Biryani Recipe:

Ingredients for dough:
2 tsp Yeast
1 tbsp Sugar
1/2 cup Milk (warm)
2 cup All-purpose flour
1/2 tsp Salt
2 tbsp Oil
4 tbsp Yogurt (optional)
Water as required

Ingredients for mutton:
500g Mutton
1/2 cup Oil
1 cup Onion
1 cup Tomato (chopped)
1 tbsp Ginger paste
1 tbsp Garlic paste
1/2 tsp Black pepper
1/2 tsp White pepper
1 tsp Coriander powder
1/2 tsp Salt
1/2 tsp Garam masala
1/2 tsp Nutmeg
Water as required
10-15 cloves
1-2 Cinnamon stick
2 Bay leaf

Ingredients for rice:
1 tbsp Vinegar
1 tsp Cumin seeds
2 cup Rice (soaked)
1 ½ tsp Salt
2 ½ cup water
1/2 cup Pea (boiled)
1/2 cup Carrots (boiled)
2 Bay leaf

Ingredients for garnish:
Fried onion as required
Coriander leaves as required
Fried almonds as required
Fried cashew as required
Saffron mixed in water as required
Melted butter for greasing
Nigella seeds as required
Green chilies sliced as required

Directions for dough:
In a bowl add flour, salt, oil and yogurt.
In a separate bowl mix warm milk, sugar, yeast well and leave it for 5 to 10 minutes.
Mix the mixture into flour and knead a soft dough. Cover it with cling film for one hour.

Directions for mutton:
In a pan heat oil, add onion and cook until translucent.
Add ginger garlic paste and cook for 2-3 minutes, then add tomatoes and cook until skin separates.
Now add mutton and cook until it changes color.
Add black pepper, white pepper, coriander powder, salt, garam masala, cloves, cinnamon stick and bay leaf, mix well.
Add half cup of water and cook for 10 to 15 minutes on medium flame.
Then add another half cup of water, cover and let it simmer for 15 to 20 minutes on low flame.
Take it off the flame and let it cool down.

Directions for rice:
Boil water in a pan, add cumin, bay leaf and vinegar in it.
Add rice and cook them cook on low flame until 80% cooked.

Directions for assembling:
Roll out the dough into a large disk in round shape.
Grease a glass bowl with melted butter, sprinkle nigella seeds.
Put the dough in glass bowl, covering all the sides properly.
Now make layers with rice, mutton gravy, peas, carrots, fried onion and coriander leaves.
Sprinkle almonds, cashew, saffron water and green chilies on top. Cover it with dough.
Bake in a preheated oven at 180 degree for 20 to 30 minutes or until golden.

Preparation time: 30 minutes
Cooking time: 1 hour 30 minutes
