Ingredients for Dough:
Yeast 2 tsp
Sugar 1 tbsp
Milk (warm) as required
All-purpose flour 2 cups
Salt 1/2 tsp
Oil 2 tbsp
Yogurt (optional) 4 tbsp
Oil (for greasing) 1/2 tsp

Ingredients for Chicken Pulao:
Guard Basmati Rice 2 cups
Water (for soaking) as required
Oil 1/2 cup
Onion (chopped) 1 cup
Green chilies 3-4
Cumin seeds 1 tsp
Coriander seeds 1 tsp
Curry leaves 2
Ginger garlic paste 1 tbsp
Chicken 1/2 kg
Salt to taste
Red chili flakes 1/2 tbsp
Coriander powder 1/2 tbsp
Yogurt 1 cup
Water 4 ½ cups
Soaked rice 2 cups
Mint leaves 10-15

Directions for Dough Preparation:
In a bowl add flour, salt, oil, sugar, yeast and yogurt and mix well.
Add warm milk and knead a smooth dough. Grease with oil and cover with cling for 30 minutes near a warm place or until double in size.
Direction for Chicken Pulao Preparation:
In a bowl add Guard Basmati Rice, water and soak as per instructions on the pack.
Now, heat oil in a pot and sauté onion until slightly golden brown. Add green chilies, cumin seeds, curry leaves, dry coriander and cook for a minute.
Add ginger garlic paste and cook for another 2-3 minutes.
Now add chicken and cook until color changes and chicken start to get light golden brown.
Add salt, red chili flakes, coriander powder and cook for 3-4 minutes. Add 1/2 cup water and cook for 3-4 minutes. Now add yogurt and cook until oil separates. Now add 4 cups water, bring it boil. Add rice and let it simmer until water is reduced below the rice level.
Add mint leaves and cover with lid and steam on low flame for 10-15 minutes. Now take off flame and your Chicken Pulao is ready.
Directions for Assembling:
Take the dough and roll it down into large round disc like shape.
Place the dough in a bowl, covering the sides of the bowl.
Fill in the prepared chicken pulao and seal the top with the rest of the dough hanging outside the bowl. Brush milk if needed to bind the dough together.
Flip onto a baking tray, brush some milk and sprinkle nigella seeds on top. Bake in a pre-heated oven at 180 degrees for 20-30 minutes or until the outside of dough is brown and crispy.
Take out of the oven, cut the dough from top and serve hot.
Preparation time: 30 mins
Cooking time: 1 hr.
