This Pasta In A Sausage White Wine Sauce Recipe is an amazing weeknight pasta recipe that uses Italian sausage and a white wine sauce.
Ingredients:
Salt to taste
15 - 30 mL (1 - 2 Tbsp) olive oil
200g (1 link) Italian sausage, casing removed
200g dry orecchiette
5 mL (1 tsp) red pepper flakes
375 mL (1½ cups) white wine
50g hard cheese, like Parmesan grated
500 mL (2 cups) frozen peas
30 - 45 mL (2-3 Tbsp) butter


Method:
Bring a pot of salted water to a boil.
In a medium saucepan heat the olive oil and fry off the sausage meat, breaking it up as you go.
When the sausage is fried most of the way, start cooking the pasta.
Season the sausage with hot pepper flakes
Add the wine to the sausage, and bring to a boil.
Reduce the wine by ½.
Add in the frozen peas to the sausage mixture.
Just as the pasta is cooked, stir the butter into the sausage and wine.
Transfer the pasta and some of the cooking water to the pot with the sausage.
Stir in the grated cheese.
Check and adjust the seasoning.
