PASTA WITH SMOKED SALMON RECIPE - Easy and light!

In this episode, I'd like to share with you one of my favourite pasta dishes. It is so easy to make and tastes amazing. I use boiling pasta water and a little cream for the sauce so it tastes light and creamy. I also love to use capers, lemon zest and fresh dill with smoked salmon, but feel free to change up/add anything you like. Hope you give it a try!

INGREDIENTS (2-3 servings)
1/2 pack pasta (250 gr. - 1/2 lb)
100 gr. (0.220 pounds) smoked salmon
1 small onion - finely chopped
3 tbsp capers - drained
5-6 tbsp grated cheese - I use parmesan
Salt & pepper
Zest of a half a lemon
1 tbsp olive oil
1 tbsp butter
2-3 tbsp chopped fresh dill

DIRECTIONS
Fill a large pan with water and bring to a boil.
Cut salmon into bite-sized pieces.
Heat olive oil and butter in a large pan, add onion.
Sprinkle a tiny pinch of salt and pepper.
Saute for about 7-8 minutes, or until tender stirring occasionally, over medium low heat.
Add capers and mash some of them using back of a spoon, to bring out the flavour.
Add cream and bring to a simmer stirring constantly, turn of the heat.
Add 2-3 tbsp grated cheese and zest of a half a lemon, mix.
Set aside until needed.
When water comes to a boil, add a good pinch of salt and mix.
Add pasta and cook over medium high heat, stirring occasionally.
Make sure to set the timer according to package instructions.
When nearly done, reserve 1/2 cup boiling pasta water, then drain.
Reduce heat to medium low, put the pan back on fire, add the sauce.
Add reserved pasta water, mix well.
Add salmon and mix.
Add chopped dill, reserving some for garnishing.
Make sure to check the salt in the dish, before adding any.
I always add just some black pepper.
Lastly, add 2-3 tbsp grated cheese mix.
You can add some more for a thicker sauce.
Stir in drained pasta, mix gently and turn off the heat.
Transfer into a serving plate, garnish with chopped dill and serve immediately.
You can also serve it in a big serving plate on your table, if desired.
