Cottage cheese½ cup fresh coconut, grated½ cup Coriander leaves¼ cup Mint leaves4 pods of Garlic3 Green chillies1 tsp. Cumin seedsJuice of half a lemonSalt, to tasteBanana leaves cut into 4”x4” squaresMethod:-1. Slice the cottage cheese ½ cm thick and then cut into 2”x2” squares.2. Grind the coconut, coriander, mint, garlic, chillies, cumin seeds and lemon juice to a fine paste and add the salt.3. Take a piece of cottage cheese and spread the chutney on it and the cover with another piece of cottage cheese. Follow the same procedure for the rest of the cottage cheese slices.4. Wrap each cottage cheese sandwich in a banana leaf and secure it with a toothpick and steam these in a steamer for 10 minutes or till the banana leaves have changed their colour.5.
