When fresh sorghum in season, you must indulge in making this amazing salad because it is not only tasty but very healthy!PAUNK SALADIngredients1 cup fresh sorghum (paunkh)1 medium onion, finely chopped1 small tomato, finely chopped1 English cucumber, chopped2 tbsps roasted peanuts, peeled2 tbsps fresh pomegranate pearls1-2 green chillies, chopped1 tbsp chopped fresh coriander leavesA large pinch of roasted cumin powderSalt to taste2 tbsps moth beans (matki) sprouts2 tbsps green gram (sabut moong) sprouts½ lemonDressing¼ cup hung yogurt1 tsp crushed garlicSalt to taste½ lemon1 tbsp extra virgin olive oil2 tsps honeyCrushed black peppercorns to tasteTo serveShredded lettuce leaves as requiredCucumber slices as requiredCherry tomato wedges as requiredBlack pepper sev for garnishMethod1. Take pauk in a large bowl, add onion, tomato, cucumber, peanuts, pomegranate pearls, green chillies, coriander leaves, roasted cumin powder, salt, moth beans, green gram sprouts and squeeze the juice of lemon and mix well. 2. To make the dressing, take hung yogurt in a bowl, add garlic, salt, squeeze juice of lemon, extra virgin olive oil, honey and crushed black peppercorns and mix well.3. Add this dressing over the salad and gently toss. Transfer on a bed of shredded lettuce leaves.4.
