The non-vegetarian flavourful and healthy soup is a wholesome and comforting one. It is made with mutton trotter infused with simple spices. Traditionally cooked overnight, this recipe is a quicker version of it without compromising on the taste. PAYA SOUPIngredients 10-12 lamb-trotters (paya) 1 medium onion1 tbsp oil1 bay leaf8-10 black peppercorns5-6 green cardamoms3-5 cloves3-4 garlic clovesSalt to taste1 inch ginger, cut into strips8-10 fresh coriander stemsMethod1. Peel and slice onion horizontally.2. Heat oil in a non-stick pan. Add bay leaf, peppercorns, cardamoms and cloves and sauté till fragrant.3. Add separated onion slices. 4. Slice garlic cloves, add to the pan and sauté for 1 minute. Add lamb trotters and mix. Add salt, ginger strips and sauté till the mixture turns golden. 5. Add torn coriander stems, mix and cook for 30 seconds. Add 1 cup water, mix and cook for 2-3 minutes. 6. Transfer the lamb trotters mixture into a pressure cooker and place it on heat. Add 2 cups water, cover and pressure cook till 4-6 whistles.7. Transfer the cooked lamb trotters in a bowl. Strain the stock mixture in another bowl and reserve.8. Add lamb trotters into the stock mixture and mix.9.
