Peach & Almond Cookies Cupcake Jemma

You may have seen a few weeks back we shared a couple recipes in The Guardian - one of them being these absolutely delicious, melt-your-mouth peach and almond cookies! Think a soft biscotti filled with a tangy, creamy peach curd - THEY'RE INSANE! This recipe makes 12-15 cookies :)

PEACH CURD
55g Ripe Peach Puree
10g Peach Syrup
50g Caster Sugar
1 Egg
3 Egg Yolks
50g Cold Butter

ALMOND COOKIES
75g Brown Butter
60g Caster Sugar
1 Egg
tsp Almond Extract
240g Ground Almonds
tsp Baking Powder
tsp Sea Salt

50g Icing Sugar for Rolling
