Peach And Walnut Salad | Cooking with California Walnuts | Sanjeev Kapoor Khazana

A very satiating, wholesome salad that makes a meal, is crunchy and tasty to bite into. This salad has sweet, nutty and tangy flavours.

PEACH AND WALNUT SALAD

Ingredients

4-5 tinned peaches
½ cup California Walnuts
1 tbsp sweet chilli sauce
1 tsp red chilli sauce
1 tbsp olive oil
7-8 iceberg lettuce leaves, soaked in chilled water
6-8 cherry tomatoes
1 medium cucumber, peeled
2-3 fresh mint sprigs
Radish micro greens for garnishing

Method

1. Heat a non-stick pan. Add California Walnuts, toast till slightly crisp and roughly break.
2. To prepare dressing, mix together sweet chilli sauce and red chilli sauce in a bowl. Add olive oil and mix well.
3. Drain and roughly tear iceberg lettuce leaves and put in another bowl.
4. Cut peaches into ½ inch pieces and add to lettuce leaves alongwith cherry tomatoes.
5. Halve the cucumber horizontally and cut each halve vertically. Deseed and slice each cucumber piece.
6. Add sliced cucumber, torn mint sprigs, crushed California Walnuts and dressing to lettuce leaves mixture and toss well.
7. Serve immediately garnished with micro greens.
