You'll melt for this peachy take on an ice cream sandwich.INGREDIENTS:2 mantou steamed bunsFinely-ground sugar1-2 Tbsp vanilla paste2 Tbsp brown sugarPinch cayenne pepper1 fresh peach, pitted and sliced into ½-inch slices1 Tbsp butter2 hefty scoops high-quality vanilla ice cream½ box of vanilla wafers, pureedSTEPS:1. Heat a steamed bun, then toss it in finely ground sugar and let sit at room temperature.2. In a bowl, mix vanilla paste, brown sugar and cayenne pepper. Toss sliced peaches in the glaze.3. Butter a grill pan and cook peaches on one side for about 1 minute. 4. Transfer to a plate to cool slightly.5. Scoop a nice big scoop of ice cream, pack it tight, then roll it in the vanilla wafer powder.6.
