Peanut Butter and Chocolate Cupcakes | Sanjeev Kapoor Khazana

Freshly baked cupcakes with flavour of chocolate and peanut butter.

PEANUT BUTTER AND CHOCOLATE CUPCAKES

Ingredients

¼ cup peanut butter + for frosting
¼ cup chocolate chips + for garnishing
100 grams refined flour (maida)
½ teaspoon baking powder
125 grams butter
125 grams castor sugar
2½ eggs
A few drops of vanilla essence
2 tablespoons milk
Whipped cream for frosting

Method
1. Preheat oven to 180˚C.
2. Sieve together the refined flour and baking powder into a bowl and add chocolate chips. Mix well. Set aside.
3. Cream together butter and castor sugar in a large bowl, till fluffy.
4. Add one egg at a time and continue creaming.
5. Break egg in small bowl and whisk well.
6. Add half the egg and vanilla essence and cream further till light and fluffy.
7. Add the refined flour mixture. Mix well. Ensure that there are no lumps formed. Gradually add milk and mix well. Put the mixture into piping bag and pipe out in silicon moulds, place the moulds on a baking tray.
8. Put the tray in the preheated oven and bake for 20 to 25 minutes. Remove from heat and cool down to room temperature.
9. Demould.
10. Mix whipped cream and peanut butter in another bowl. Transfer into a piping bag and pipeout rosettes over the cupcakes and garnish with chocolate chips.
11. Serve immediately.
