A must try recipe, indeed!PEANUT BUTTER NOODLESIngredients¼ cup creamy peanut butter300 grams boiled noodles½ tsp dark soy sauce1 tsp red chilli sauceCrushed black peppercorns to tasteSalt to taste½ tsp corn flour2 tbsps oil2 spring onion bulbs, diagonally sliced1 tbsp finely chopped ginger1 tbsp finely chopped garlic1 small red capsicum, cut into thin strips1 small green capsicum, cut into thin strips1 small carrot, cut into thin stripsDiagonally sliced spring onion greens for garnishDiagonally sliced fresh red chillies for garnishMethod1. Take peanut butter in a bowl. Add dark soy sauce, red chilli sauce, crushed black peppercorns, salt, corn flour and 2 tbsps water and whisk till smooth.2. Heat oil in a non-stick wok. Add spring onion bulbs, ginger and garlic and sauté on high heat for 1-2 minutes.3. Add red capsicum, green capsicum, and carrot and sauté for 1-2 minutes. Add boiled noodles and toss well.4. Add the prepared paste and 2 tbsps water and mix well. 5. Transfer the noodles into a serving bowl, garnish with spring onion greens and fresh red chillies.
