Peanut Butter Noodles | पीनट बटर नूडल्स | Noodle Recipes | Quick & Easy | Sanjeev Kapoor Khazana

This perfectly balanced noodles recipe has the sweetness and nuttiness from the peanut butter and a hint of heat from the chillies! A must try recipe, indeed!

PEANUT BUTTER NOODLES

Ingredients

¼ cup creamy peanut butter
300 grams boiled noodles
½ tsp dark soy sauce
1 tsp red chilli sauce
Crushed black peppercorns to taste
Salt to taste
½ tsp corn flour
2 tbsps oil
2 spring onion bulbs, diagonally sliced
1 tbsp finely chopped ginger
1 tbsp finely chopped garlic
1 small red capsicum, cut into thin strips
1 small green capsicum, cut into thin strips
1 small carrot, cut into thin strips
Diagonally sliced spring onion greens for garnish
Diagonally sliced fresh red chillies for garnish

Method

1. Take peanut butter in a bowl. Add dark soy sauce, red chilli sauce, crushed black peppercorns, salt, corn flour and 2 tbsps water and whisk till smooth.
2. Heat oil in a non-stick wok. Add spring onion bulbs, ginger and garlic and sauté on high heat for 1-2 minutes.
3. Add red capsicum, green capsicum, and carrot and sauté for 1-2 minutes. Add boiled noodles and toss well.
4. Add the prepared paste and 2 tbsps water and mix well.
5. Transfer the noodles into a serving bowl, garnish with spring onion greens and fresh red chillies. Serve hot.
