Peanut Butter Pie | Sanjeev Kapoor Khazana

A dark chocolate cookie crust and creamy peanut butter filling inside - this tart is scrumptious

PEANUT BUTTER PIE - (Serves - 4)

Ingredients

1½ cups + 2 tablespoons peanut butter
10-15 dark chocolate cookies
¼ cup + 8 tablespoons butter
1 cup powdered sugar
½ cup fresh cream
1 cup chopped dark chocolate
Mango chocolate chips for sprinkling
Orange chocolate chips for sprinkling

Method

1. Take dark chocolate cookies in a plastic zip-lock bag, seal and crush the cookies using a rolling pin to make a fine powder. Transfer in a bowl.
2. Take ¼ cup butter in a microwave proof bowl and heat till microwave for 30 seconds or till it melts. Add it to dark chocolate cookie powder and mix well.
3. Line an aluminium tart mould with cookie-butter mixture. Refrigerate till set.
4. Combine 8 tablespoons butter, peanut-butter and powdered sugar in another bowl and whisk till creamy using an electric beater.
5. Put the peanut butter mixture and level it out. Refrigerate till set. This is pie.
6. To prepare ganache, heat cream in a non-stick pan and bring to boil. Add dark chocolate, mix and cook till it melts. Remove from heat and cool.
7. Spread ganache on top of pie and tap. Sprinkle mango chocolate chips and orange chocolate chips on top. Refrigerate till set.
8. Demould, cut into wedges and serve.
