Hara Matar Ka Paratha with Sukha Alu

This dish, Hara Matar Ka Paratha, is my favourite, mainly because I can serve this in so many ways. For breakfast, in lunch box, for dinner, lunch. Even they are perfect as a packed lunch when you are on the run! I am making this today with Sukha Alu Ki Sabji, which is not only very easy to cook but also very tasty. Ingredients
**** For Green Peas Stuffing
* Ingredients
One cup green pea
Two chopped green chillies
2/3 cloves garlic, coarsely chopped
Salt to taste
Del Monte Olive Pomace Oil 3/4 Tbs

* Method
Step 1 : Grind the green peas with little salt & chopped green chillies to form a thick paste.
Step 2 : Add 3 to 4 Tbs of olive oil on a heated pan
Step 3 : When oil is hot add coarsely chopped garlic & chopped green chillies & mix well
Step 4 : Add the green peas paste & mix well
Step 5 : Switch off the gas and allow the green peas paste to cool down

**** For Sukha Aloo
* Ingredients
2 big boiled potatoes, cut into cubes
Del Monte Pomace Olive Oil 3/4 Tbs
tsp cumin seeds
1/2 tsp turmeric powder
1/2 tsp coriander powder
tsp cumin powder
tsp red chilli powder
Pinch of heeng
1 red dry chilli
3 / 4 green chillies
Chopped coriander leaves for garnishing
Salt to taste
* Method
Step 1 : Add 3 to 4 Tbs of olive oil in a heated pan
Step 2 : As the oil heats up add whole cumin seeds & a pinch of heeng
Step 3 : Add red dry chilli & green chillies when cumin seeds crackle
Step 4 : Add chopped boiled potatoes & mix well
Step 5 : Add turmeric powder, cumin powder, coriander powder & red chilli powder
Step 6 : Mix well
Step 7 : Add little water
Cook for 2 to 3 minutes and your sukha alu is ready


**** Parathas & Plating

Step 1 : Prepare atta dough and keep ready
Step 2 : Make balls from atta dough & roll out the parathas as shown after sprinkling some atta on the work surface
Step 3 : Put the green peas stuffing inside the rolled-out paratha, as shown
Step 4 : Fold & roll again
Step 5 : Roast both sides till cooked
Step 6 : Drizzle a tsp of olive oil on the paratha
Step 7 : Cut into four squares for plating
Step 8 : Serve with sukha alu garnished with fresh coriander leaves & dahi
