Pecan Pie Bars | Sanjeev Kapoor Khazana

A mixture of pecan nuts topped on a half baked pie crust, then baked again, cut into bars and serve.

PECAN PIE BARS

Ingredients

1 cup chopped pecans
1 cup refined flour
½ cup chopped chilled butter + for greasing
¼ teaspoon salt
¼ cup sugar
2 tablespoons milk
½ teaspoon baking soda
2 eggs
¼ cup brown sugar
½ cup corn syrup
2 tablespoons melted butter
1 teaspoon vanilla essence
¼ cup dark chocolate chips
Icing sugar for dusting

Method

1. Preheat oven to 180° C. Grease a barfi tray with some butter.
2. Take flour in a bowl. Add salt, sugar and chilled butter and mix using hands till it resembles breadcrumbs.
3. Add milk and mix using your hands and combine to make a dough. Transfer into the greased tray, lightly press to level it out and dork using a fork. Place on a baking tray.
4. Put the baking tray in preheated oven and bake for 15 minutes.
5. To prepare pecan filling, beat eggs in another bowl using an electric beater. Add brown sugar and whisk till it melts.
6. Add corn syrup, melted butter and vanilla essence and mix. Add pecan and dark chocolate chips and mix well.
7. Pour pecan mixture on top of baked crust, put the tray back into the preheated oven and bake for 15-20 minutes.
8. Cut into bars, dust icing sugar on top and serve.
