Peerkangai curry/Ridge gourd curry | Gayathiri's Cookbook

Ridge gourd curry is healthy, delicious, and easy to make. This spicy, Tamilnadu style curry tastes great with rice/roti. I love to eat this curry with rasam rice and morkulambhu.

Ingredients:
Ridgegourd/ Peerkangai- 2 or 3
Oil- 2 tbsp
Mustard seeds- 1/2 tsp
Uraddal- 1.5 tsp
Channadal- 1.5 tsp
Red chillies- 2
Curry leaves- 5-10
Turmeric powder- 1/2 tsp
Salt- As needed
Red chilli powder- 1 tsp
Sambar powder- 1 tsp

Recipe:

1. Take 3 or 4 Ridgegourd. Peel the skin either by a peeler or by a knife. Cut into large pieces.

2.Heat 2 tsp oil in a pan. Add 1/2 tsp mustard seeds. When it starts to crackle, add 1.5 tsp Urad dal, 1.5 tsp Channa dal and 2 red chillies. Saute until the dals turn golden brown.

3.Add curry leaves and ridge gourd. Cook with 1/2 tsp turmeric powder,3/4 tsp salt. Close the lid and cook until the vegetables are soft.

4. When the vegetables are cooked, add 1 tsp red chilli powder and 1 tsp sambar powder and 1/2 cup water to cook the masala.

5. Cook until the raw smell of the powders go away.

Ridge gourd curry is ready. Serve it with rice or roti!!
