Pepper Chicken Uttappam | Sanjeev Kapoor Khazana

PEPPER CHICKEN UTTAPPAM

Ingredients

400 grams boneless chicken, cut into thin strips
Dosa batter as required
1 tablespoon oil
½ teaspoon cumin seeds
7-8 curry leaves
1 medium onion, finely chopped
1 tablespoon finely chopped garlic
1 inch ginger, finely chopped
1 green chilli, finely chopped
1 teaspoon coriander powder
Salt to taste
Crushed black peppercorns to taste
1 teaspoon coconut oil + for greasing
1 tablespoon chopped fresh coriander leaves

Method

1. Heat oil in a non-stick pan. Add cumin seeds and sauté for 30 seconds.
2. Add curry leaves and sauté. Add onion, mix and sauté till it turns light brown. Add garlic, mix and sauté. Add ginger, mix and sauté for a minute.
3. Add green chillies and coriander powder, mix and sauté well. Add chicken and mix.
4. Add salt, crushed peppercorns, mix and cook till the chicken is fully done. Add coconut oil, mix and cook till dry.
5. Add coriander leaves and mix. Remove from heat and set aside.
6. Heat a non-stick tawa and grease with some coconut oil. Spread a ladleful of batter into a medium size round, drizzle oil on the edges and let the underside cook. Spread a spoonful of the cooked chicken mixture on top, press lightly, flip and cook for a minute.
7. Serve hot.
