Pepper Garlic Egg Fry is a yummy, quick and flavourful way to prepare eggs.

PEPPER GARLIC EGG FRY

Ingredients

10-12 garlic cloves
15-20 black peppercorns
6 hard boiled eggs
1 inch ginger
3-4 green chillies
2 tbsps oil
1 tsp cumin seeds
1 medium onion, finely chopped
¼ cup fresh cream + for garnish
½ tsp Tata Sampann Garam Masala
1 tbsp chopped coriander leaves
Fresh coriander sprig for garnish

Method

1. Coarsely crush garlic, ginger, and black peppercorns in a mortar with a pestle. Add green chillies and continue to crush.
2. Heat oil in a non-stick pan. Add cumin seeds and let them change colour. Add the crushed mixture and sauté for 1-2 minutes.
3. Add onion and sauté till translucent. Add salt, red chilli powder, turmeric powder, cumin powder and sauté for a minute.
4. Add ¼ cup water, mix and cook for 1 minute.
5. Make vertical slits on the eggs and add them into the pan and gently mix till well coated with the masala.
6. Add ⅓ cup water, mix, cover and cook for 2-3 minutes. Add cream, Tata Sampann Garam Masala, mix and cook for 1 minute. Add coriander leaves and serve hot garnished with fresh cream and coriander sprig.
