Decadent chocolate soufflés, spongy and chocolaty; this French dessert is a must-try! PERFECT CHOCOLATE SOUFFLEIngredients1½ cups dark chocolate, melted4 egg yolks6 egg whites6 tbsps castor sugar + dusting4 tsps refined flour1 tbsp corn starch1½ tsps vanilla essence1½ cups milk6 tbsps fresh cream1½ tsps lemon juiceFresh mixed berries to serveMethod1. Preheat the oven at 180˚C. Grease the ramekins with butter and dust with castor sugar and refrigerate.2. In a bowl, add egg yolks, 3 tbsps castor sugar, refined flour, corn starch, and vanilla essence, whisk it well and set aside.3. Heat a non-stick pan, add milk, fresh cream and mix well. Bring it to a boil and take it off the heat.4. Add ¼ of the hot milk-cream mixture into the egg yolks mixture and whisk it well. Add the remaining milk-cream mixture into the egg yolks mixture and whisk it well.5. Add the prepared mixture into the same pan and place it back on low heat. Cook the mixture till thickens, constantly stirring.6. Take it off the heat and add chocolate, mix well. Transfer into a big bowl and set aside.7. In another bowl, add egg whites, lemon juice and remaining sugar and whip till stiff peaks.8. Add ¼ of the egg white mixture into the egg-yolk chocolate mixture and whisk it till well combined. Add remaining egg white mixture into the prepared mixture and fold it well.9. Fill ¼ of the prepared mixture into the greased ramekins and tap. Fill the ramekins till the top with the remaining mixture.10. Use a palate knife to remove the excess batter from the rim, creating a level surface. Clean the rim of the ramekins with the thumb. Bake for 10-12 minutes. 11.
