ROAST CHICKEN

Ingredients

Whole chicken 1 (800 grams)
Fresh parsley, chopped 4 tbsp
Fresh thyme, chopped 2 tsp
Lemon rind, 1tsp
Worcestershire sauce 2 tablespoons
Melted Butter ½ cup
Salt to taste
Black pepper powder to taste
Carrots 1 medium
Celery 1 stem
Leek 1stem
Oil 2 tablespoons
Zucchini (green and yellow) 1small each
Bell peppers ( red and yellow) 1 medium each
Mushroom peeled and washed 6-7nos
Whole garlic cut into halves 2pods
Pink salt (rock salt) to taste

Method

• Preheat oven to 220ºC.

• Clean and wash the chicken with skin

• To make the marinade, mix together Lemon rind, thyme, parsley, salt, leeks, celery, celery leaves, Worcestershire sauce, crushed pepper, pink salt, melted butter and one tablespoon of oil.
• Now pour this on the chicken and keep aside.

• Now take the baking tray add one tablespoon of oil, carrot, zucchini, bell peppers, mushroom and garlic halves.
• Now place the marinated chicken on to the tray and roast it at 220 degree C for 30-35 mints.
• Once cooked Remove it on the serving plate along with the roasted vegetable and serve hot.
