Peri Peri Chicken | Sanjeev Kapoor Khazana

An African chicken delicacy – spicy and bursting with flavour.

PIRI PIRI CHICKEN

Ingredients

500 grams chicken leg
1 teaspoon + ¼ cup + 3 tablespoons olive oil
5-6 fresh red chillies
6-8 garlic cloves
1 medium onion
A few sprigs of fresh parsley
2-3 fresh oregano sprigs
1 teaspoon paprika powder
Salt to taste
1 tablespoon red wine vinegar
2 tablespoons lemon juice
1 teaspoon crushed black peppercorns
French fries for serving
1 tablespoon butter
Steamed corn on the cob for serving

Method

1. Preheat oven to 180º C.
2. Heat 1 teaspoon olive oil in a non-stick pan, add chillies and garlic.
3. Roughly chop onion and add to the pan and cook for 4-5 minutes. Take it on a plate and cool.
4. Grind the prepared chilli mixture, parsley, oregano, paprika powder, salt, red wine vinegar, lemon juice, crushed peppercorns, 3 tablespoons olive oil to a smooth paste.
5. Make incisions on the chicken, add the ground paste and rub the spices over chicken. Keep in the refrigerator for 3-4 hours.
6. Place the marinated chicken on a baking tray, put the tray in the preheated oven and bake for 15-18 minutes.
7. Place French fries on a serving plate.
8. Heat butter in a non-stick pan, place corn on the cob and sauté till brown and done.
9. Place piri piri chicken in the center of the plate, place sautéed corn on the cob on other side and serve immediately.
