Crispy tikkis prepared with sweet potatoes and flavoured with peri peri spice mix. A great snack when you're craving something fried!

PERI PERI SWEET POTATO TIKKI

Ingredients

3-4 medium sweet potatoes, boiled, peeled and grated
1½ tbsps peri peri spice mix + to sprinkle
2 tbsps oil
1 medium onion, chopped
2 green chillies, chopped
Salt to taste
1 tsp onion powder
½ tsp garlic powder
Crushed black peppercorns to taste
2 tbsps chopped fresh parsley + to sprinkle
1 tsp lemon juice
Dried breadcrumbs for coating
Corn flour slurry as required
Oil for deep frying
Tomato ketchup for serving
Mayonnaise for serving

Method

1. Heat oil in a nonstick pan. Add onion, green chillies, salt and sauté till onions are translucent.
2. Take sweet potatoes in a bowl. Add onion powder, garlic powder, crushed black peppercorns, parsley, salt, peri peri spice mix, lemon juice, cooked onion mixture and mix well.
3. Divide the mixture into equal portions and roll into balls. Flatten to make tikkis.
4. Add salt and crushed peppercorns to dried breadcrumbs and mix well.
5. Dip in corn flour slurry and roll in breadcrumbs.
6. Heat sufficient oil in a kadai. Slide the prepared tikkis in oil and deep fry till golden brown and crisp.
7. Drain on absorbent paper, sprinkle peri peri spice mix, parsley and serve hot with tomato ketchup and mayonnaise.
