Pesto and Grilled Vegetables Bread Pizza | Sanjeev Kapoor Khazana

Toasted bread roundels topped with pesto sauce, grilled vegetables and grated cheese

PESTO AND GRILLED VEGETABLES BREAD PIZZA - (Serves - 4)

Ingredients

Pesto for spreading
½ medium yellow squash, cut into roundels
½ medium green zucchini, cut into roundels
½ cup mixed bell pepper triangles
8 white bread slices
1-2 fresh thyme sprigs
Salt to taste
Crushed black peppercorns to taste
1 tablespoon olive oil
Butter for spreading and greasing
Grated mozzarella cheese as required

Method

1. Preheat oven to 180° C.
2. Combine squash, zucchini, bell peppers, torn thyme sprigs, salt, crushed peppercorns and olive oil in a bowl and mix well. Set aside to marinate for 10-15 minutes.
3. Cut each bread slice into roundels using a medium size cookie cutter.
4. Spread some butter on each bread roundel and transfer on a baking tray. Put the baking tray in preheated oven and bake for 5-7 minutes or till golden and crisp.
5. Heat an electric griller and grease with some butter. Place the marinated vegetables and grill till evenly golden. Transfer in a bowl.
6. Spread some pesto on each toasted bread roundel and place one grilled zucchini roundel, one grilled squash roundel and grilled bell pepper triangles on top. Put some mozzarella cheese on top.
7. Put the baking tray back in preheated oven and bake for 5 minutes or till the cheese melts.
8. Serve hot.
