Pesto Chicken Bake | Sanjeev Kapoor Khazana

A quick bake dish made with tomatoes, chicken and pesto sauce. Watch this video to find out how to make this recipe.

PESTO CHICKEN BAKE

Ingredients

½ cup pesto
250 grams boneless chicken breasts, sliced
2 medium tomatoes, cut into roundels
Salt to taste
Crushed black peppercorns to taste
200 grams fresh mozzarella cheese, cut into roundels
Mixed dried herbs for sprinkling

Method

1. Preheat oven to 180° C.
2. Line a glass baking dish with tomato roundels and sprinkle some salt and crushed peppercorns on top.
3. Place chicken breasts covering the tomato layer and spread pesto on top. Sprinkle some salt and crushed peppercorns on top.
4. Place the baking dish in the preheated oven and bake for 8-10 minutes. Remove from oven.
5. Place mozzarella cheese roundels on top covering the layer and sprinkle some mixed dried herbs, crushed peppercorns and salt.
6. Put the dish back into the preheated oven and bake for 5 minutes.
7. Serve hot.
