Pesto | Dips Sauces and More | Sanjeev Kapoor Khazana

Tempting to eat by the spoonful, Pesto features a rare combination of pine nuts with basil leaves and olive oil. Exotic to the core, this pesto sauce has an intense flavor.

PESTO SAUCE
Ingredients

8-12 basil leaves
ΒΌ cup pine nuts (chilgoza)
8-10 garlic cloves
100 grams Parmesan cheese
3-4 tablespoons olive oil
Salt to taste
Crushed black peppercorns to taste
1 cup boiled spaghetti pasta for serving
A few basil sprigs for garnishing

Method

1. To make pesto sauce, blend together garlic cloves, Parmesan, pine nuts in a blender jar. Add basil leaves, olive oil, salt, crushed black peppercorns and blend once again.
2. Transfer to a serving dish and set aside.
3. Heat pasta in a non-stick pan. Add pesto sauce and toss well for 1-2 minutes. Remove from heat and transfer to a serving plate.
4. Garnish with basil sprigs and serve.
