PHO GA 2 WAYS (Vietnamese Chicken Noodle Soup)

How to make PHO GA (Vietnamese Chicken Noodle Soup) in 2 versions: dry and broth-based
Ingredients:
1mcf tiu trng - 1tsp white peppercorns
4 l chanh - 4 lime leaves
1/2 hoa hi - half a star anise
1 c hnh ty - 1 an onion, halved
1 c gng nh -a thumb-sized knob of ginger
4-5 c hnh tm - 4-5 shallots
r ng - 4 coriander roots
2L nc - 2L water
2,4kg i g gc t - 3 chicken leg quarters (2.4kg)
1mc mui - 1tbsp salt
2mcf ng phn - 2tsp rock sugar
2mc nc mm - 2tbsp fish sauce
1mcf ht nm - 1tsp stock powder
du ngh- turmeric-infused oil
l chanh - lime leaves
ng r -cilantro
vi cng hnh l - a few green onions
