PREP TIME: 10 MINUTESCOOK TIME: 60 MINUTESSERVES: 4 INGREDIENTS2 chicken thighs1 large pimento1 medium red onion3 Scotch bonnet pepper5 cloves of garlic1 small ginger1 tsp black pepper1 tsp rosemary1 tbsp smoked paprika1 tbsp soy sauce1 tbsp sesame oil2 tbsp vegetable oil1 tsp salt DIRECTION Deseed the pimento and cut into cubes. Slice onion and blend with the pimento, scotch bonnet pepper, garlic, ginger, black pepper corn and rosemary into a smooth mixture. Pour the blended mixture into a dish, add smoked paprika, salt, soy sauce, sesame oil and mix together. Add the chicken thighs and rub the pimento mixture on it. Cover with cling film and let marinate for 2 hours or more Drizzle oil on a baking pan , place the chicken on it and drizzle some oil over the chicken Cover with an aluminium foil and grill in the oven for 25 minutes. Whilst the chicken is being grilled, heat vegetable oil in a sauce pan over medium heat, add the left over pimento marinade, stir and let simmer down then take of the heat. Take the chicken out of the oven, remove the foil, turn the chicken and place back into the oven and bake for another 25 minutes. Pimento grilled chicken ready to serve. Serve with the pimento sauce.
