Pimento Grilled Chicken

SERVES: 4



INGREDIENTS

2 chicken thighs

1 large pimento

1 medium red onion

3 Scotch bonnet pepper

5 cloves of garlic

1 small ginger

1 tsp black pepper

1 tsp rosemary

1 tbsp smoked paprika

1 tbsp soy sauce

1 tbsp sesame oil

2 tbsp vegetable oil

1 tsp salt



DIRECTION

Deseed the pimento and cut into cubes.
Slice onion and blend with the pimento, scotch bonnet pepper, garlic, ginger, black pepper corn and rosemary into a smooth mixture.
Pour the blended mixture into a dish, add smoked paprika, salt, soy sauce, sesame oil and mix together.
Add the chicken thighs and rub the pimento mixture on it.
Cover with cling film and let marinate for 2 hours or more
Drizzle oil on a baking pan , place the chicken on it and drizzle some oil over the chicken
Cover with an aluminium foil and grill in the oven for 25 minutes.
Whilst the chicken is being grilled, heat vegetable oil in a sauce pan over medium heat, add the left over pimento marinade, stir and let simmer down then take of the heat.
Take the chicken out of the oven, remove the foil, turn the chicken and place back into the oven and bake for another 25 minutes.
Pimento grilled chicken ready to serve. Serve with the pimento sauce.
