Spread the love! :)Download our App - http://bit.ly/DownloadIndiaFoodNetworkAppIngredients:-1 ½ cups flour-1 tsp baking powder-½ cup pineapple, diced-½ cup butter, soft-⅔ cup castor sugar-½ cup coconut milk-2 eggs-2 tsp vanilla extract-1 tsp coconut extract Frosting-¾ cup icing sugar-2 tbsp butter, soft-¼ cup coconut milk-½ tsp vanilla extract-Pinch of salt-1 cup whipped creamGarnish:Coconut shreds, toastedMaraschino cherryMethod:-Heat the oven to 200°C and grease and prepare cupcake tin with liners.-Whisk butter, sugar and coconut milk together until creamy.-Add the eggs, vanilla and coconut extracts and beat for 5 minutes.-Then add baking powder and flour.-Fold in pineapple.-mix to just combine, do not overbeat.-Pour into cupcake liners and bake for 20 minutes. Frosting-Whisk the frosting ingredients together for a thick paste and spread over the cupcake.-Top with toasted coconut and cherry.
