A very popular curry that comes from Karnataka made with pineapples and is loaded with flavours! PINEAPPLE GOJJUIngredients1 medium pineapple, peeled and cut into ½ inch cubes2 tbsps coconut oil½ tsp mustard seeds15-20 curry leaves¼ tsp Tata Sampann Turmeric Powder¼ tsp asafoetida (hing)Salt to taste1½ tbsps tamarind pulp2 tbsps chopped jaggery¼ cup white sesame seeds¼ cup split skinless black gram (dhuli urad dal)8-10 black peppercorns8-10 dried red chillies, stemmed½ cup scraped coconutFried curry leaves for garnishSteamed rice for servingMethod1. Heat coconut oil in a deep nonstick pan. Add mustard seeds and once they start to splutter, add curry leaves and mix well. 2. Add pineapple and mix well. Add Tata Sampann Turmeric Powder, asafoetida, salt and mix well.3. Add 1 cup water, tamarind pulp, jaggery and mix well. Cover and cook for 8-10 minutes.4. Heat a nonstick pan. Dry roast white sesame seeds for a minute. Transfer in a plate and set aside to cool.5. Heat the same nonstick pan. Add roast urad dal, black peppercorns, dried red chilles and dry roast for a minute.6. Add coconut and roast till golden brown. Allow to cool.7. Transfer in a blender jar, add 1 cup water and grind to fine paste.8. Add this to the pineapple and mix well. Add ¾ cup water and mix well.9. Adjust salt and mix well.10.
