Loaded with chicken, these pinwheels are a must try !PINWHEEL CHICKENIngredients 2 boneless chicken breasts ½ cup chicken mince 1 medium onion 1 tablespoon oil 1 teaspoon cumin seeds 1 teaspoon chopped garlic1 teaspoon chopped ginger 1-2 green chillies Salt to taste 1 teaspoon garam masala powder 2 teaspoons chopped coriander leaves 2 tablespoons chopped mint leaves 2 teaspoons cashewnuts 2-3 teaspoons desiccated coconut1 tablespoon butterMethod 1. Preheat oven to 180° C. 2. Roughly chop onion. 3. Heat oil in a non-stick pan, add cumin seeds and sauté till they change colour, add garlic and sauté for a minute. 4. Add chopped onion and sauté till translucent. 5. Chop green chillies and add to the pan and mix well. 6. Add chicken mince and sauté on high heat for 2-3 minutes. 7. Add salt and garam masala powder and mix well. Continue to cook for 2-3 minutes. Cool and grind till smooth.8. Add coriander, mint, cashewnuts and desiccated coconut and mix well. Set aside. 9. Slit chicken breast, stuff with the chicken mixture. 10. Place the chicken over the aluminum foil, sprinkle salt and roll it tightly to make a pinwheel. 11. Put the tray in the preheated oven and bake for 5-10 minutes. 12. Heat butter in a non-stick pan, place the baked chicken and cook for 1-2 minutes.
