Piri Piri Pakoras | Sanjeev Kapoor Khazana

Thin potato slices tipped into gram flour batter and deep fried. Tossed in spicy piri piri mix.

PIRI PIRI PAKORAS

Ingredients

2-3 medium potatoes with skin
Salt to taste
1 cup gram flour
1 teaspoon red chilli powder
¼ teaspoon turmeric powder
¼ teaspoon baking soda
Oil for deep-frying
Chopped fresh coriander leaves for garnishing
Spice mix
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon dried oregano
1 tablespoon crushed stock cube
A pinch cinnamon powder
1 teaspoon red chilli flakes
Salt to taste
A pinch powdered sugar

Method

1. Thinly slice potatoes into a bowl of water. Add salt, mix and set aside.
2. Mix together gram flour, chilli powder, turmeric powder, salt and sufficient water to make a thick batter. Add baking soda and mix.
3. To make the spice mix, combine onion powder, garlic powder, paprika, oregano, crushed stock cube, cinnamon powder, chilli flakes, salt and powdered sugar in a bowl and mix well.
4. Heat sufficient oil in a kadai.
5. Dip the potato slices, one by one, in the batter and deep-fry in hot oil till golden. Drain on absorbent paper.
6. Sprinkle the prepared spice mix and mix lightly.
7. Garnish with coriander leaves and serve immediately.
