Ingredients

1 cup Refined flour (Maida)
½ cup Sugar
1 Cardamom
Salt to taste
Water as required
3 tbsp Vimal cows pure ghee
Vimal pure gold Groundnut Oil for frying
3 tbsp Pistachios
¼ cup Corn flour

Method:

1. Start by heating Vimal Pure gold Refined groundnut oil in a deep heavy bottom vessel.
2. Until the oil heats take a new clean bowl and add Refined flour followed by 1 tbsp Vimal cows pure ghee and mix vigorously to make it into crumbly texture.
3. Now simultaneously add water as required to make a soft dough and keep it for resting some time.
4. Now take a small bowl and add Corn flour, sugar with 2 tbsp of Vimal cows pure ghee and mix it well making it into pasty consistency.
5. Now to roll out the rested dough sprinkle some flour on a clean surface and start rolling it in to thin roundel.
6. Cut the edges of the roundel and make it in to a even square shape, Now apply thin layer of the ghee paste over the thinly rolled dough square and add finely chopped pistachios evenly.
7. Now Roll the square with gentle hands and conceal the dough applying water on the edges.
8. Cut the dough into even sizes and press it gently making it into oblong shapes.
9. Check oil for its temperature and fry the khajas on moderate heat until golden brown and crispy.
10. Meanwhile start with making sugar syrup adding half water and half sugar and boiling it to 2 stringy consistency.
11. Once sugar syrup attains the desired consistency add saffron and mix well before adding the khajas in them for 5-6 mins before serving.
12. Serve it with Chopped pistachios.
