A cupcake flavoured with pistachio and baked by stuffing chocolate ganache in it.PISTACHIO LAVA CUPCAKESIngredients½ cup pistachio paste1 cup dark chocolate ganache2 cups + ¼ cup refined flour2 eggs½ cup castor sugar1 teaspoon vanilla essence¼ cup butter1 teaspoon baking powder1 tablespoon milkMethod1. Preheat oven to 180° C. Line a baking tray with individual cupcake moulds.2. Break eggs in a bowl and whisk till light and fluffy using an electric beater. Add castor sugar and whisk. Add vanilla essence and whisk. Add butter and whisk well. 3. Sieve in together flour and baking powder and whisk. Add pistachio paste and whisk. Add milk and whisk well to a smooth batter. 4. Fill a piping bag with the prepared batter and pipe out into cupcake moulds filling ½ of it. Put in a scoop of ganache in each mould and pipe out remaining batter on top.5. Put the tray in preheated oven and bake for 15 minutes.6.
