Pitod ki Sabzi Marwadi Recipe Sanjeev Kapoor Khazana

Ran out of veggies and still want to make a lovely sabzi? Then this Rajasthani curry is just perfect. Made with besan, yoghurt and spices, this is a no vegetable tasty curry.

PITOD KI SABZI

Ingredients

1 cup + 2 tbsps gram flour (besan)
tsp turmeric powder
1 tsp garam masala powder
Salt to taste
tsp cumin powder
tsp carom seeds (ajwain)
tsp asafoetida (hing)
Oil for greasing
1 cups yogurt
tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
tsp garam masala
2-3 tbsps ghee
tsp mustard seeds
tsp cumin seeds
2 green chillies, slit
1 medium onion, chopped
10-15 curry leaves
inch ginger, cut into thin strips
cup fresh tomato puree


Method

1. Take 1 cup gram flour in a bowl. Add tsp turmeric powder, tsp garam masala powder, salt, cumin powder, carom seeds, asafoetida and mix well. Add 2 cups water and mix well.
2. Heat a nonstick pan. Add the prepared mixture and cook on medium heat for 6-8 minutes. Stir at regular intervals of time.
3. Spread the mixture on a greased thali and spread evenly. Set aside to cool down.
4. Take yogurt in a bowl. Add remaining gram flour, remaining turmeric powder, red chilli powder, coriander powder, remaining garam masala powder and mix well.
5. Heat ghee in a nonstick pan. Add mustard seeds and once they start to splutter, add cumin seeds, green chillies and saut for 30 seconds. Add onion and saut till translucent.
6. Add curry leaves, ginger and saut for 30 seconds.
7. Add tomato puree and cook till oil separates. Add yogurt mixture and cook for 2-3 minutes.
8. Add salt, 2 cups water and mix well. Cover and cook on medium heat for 4-5 minutes.
9. Meanwhile cut the gram flour mixture into 2-inch pieces.
10. Add the pieces to the gravy and mix well. Cook for 3-4 minutes.
11. Transfer in a serving bowl and serve hot.
