Pizookie is a pizza cookie and has really little to do with pizza. It is a dessert recipe which is served hot out of the oven and topped with ice cream. Check out Ruchi Bharani's take on this delicious, mouth-watering dessert called, pizookie.

Ingredients:

For cookie dough:
100 gms butter
1/2 tbsp. baking powder
1 tbsp. vanilla essence
2 tbsp. milk
2/3 cup icing sugar
100 gms maida
1/3 cup chocolate chips

For Caramel sauce:
10 tsp. sugar
1 1/2 tbsp. butter
1/2 cup cream
1/2 cup condensed Milk
1/2 tsp. vanilla Essence

Serve with Vanilla ice cream

Method:

To make the cookie dough:
- In a bowl, add some soft butter and whisk it for a few seconds.
- While whisking the butter, add some icing sugar to it simultaneously.
- Clean the sides of the bowl with the help of a spatula.
- Add the vanilla essence and the baking powder and whisk the mixture again.
- While whisking, simultaneously add the plain flour and milk to the mixture.
- Clean the bowl from the sides and add some white chocolate chips to the mixture.

To make the cookies:
- Line the baking tray with a silicon sheet.
- With the help of an ice cream scoop, place dollops of the cookie dough on the mat.
- Place the cookies in a pre - heated oven at 180 degrees for about 12-15 minutes.

To make the caramel sauce:
- In a pan, heat the sugar and do not stir it until it starts to melt.
- Make sure that all the sugar crystals have melted and start stirring when you see some liquid.
- Add the butter, cream and condensed milk to the above ingredient and give it a quick stir. Make sure there are no lumps.
- Add a bit of the vanilla essence, stir it and pour the sauce in a bowl.
- Let the caramel sauce cool down completely.

To serve:
- Take the cookies out of the oven and place them on a plate.
- Place one scoop of vanilla ice cream on the cookie and spread some delicious caramel sauce over it.
