Pizza Dosa | Cooking Classy with Afraz | Sanjeev Kapoor Khazana

A fusion recipe using dosa batter topped with pizza ingredients and cooked.

PIZZA DOSA

Ingredients

1½ cups readymade dosa batter
½ medium red capsicum
½ medium green capsicum
½ medium green zucchini, cut into roundels
½ medium yellow squash, cut into roundels
Salt to taste
Crushed peppercorns to taste
1 tablespoon + 1 teaspoon olive oil
Oil for drizzling
Melted butter for spreading and drizzling
1 medium onion, thickly sliced horizontally and layers separated
8-10 cherry tomatoes, halved
6-8 black olives, pitted and sliced
Grated mozzarella cheese as required
Basil leaves for garnishing
Tomato chutney
1 tablespoon oil
1 teaspoon mustard seeds
8-10 curry leaves
¼ teaspoon asafoetida (hing)
1 medium onion, finely chopped
2 medium tomatoes, finely chopped
1 teaspoon red chilli powder
¼ teaspoon turmeric powder
1 teaspoon coriander powder
Salt to taste
1 teaspoon castor sugar

Method

1. To prepare tomato chutney, heat oil in a non-stick pan. Add mustard seeds and let it splutter.
2. Add curry leaves and let it crackle. Add asafoetida and sauté. Add onion and sauté till translucent. Add tomatoes and sauté till soft and pulpy.
3. Cut red capsicum and green capsicum into triangles. Halve the zucchini roundels and squash roundels. Transfer in a bowl.
4. Add chilli powder, turmeric powder, coriander powder and salt to tomato mixture and mix. Add 2 tablespoons water, mix and cook for 1-2 minutes.
5. Add salt, crushed peppercorns and 1 tablespoon olive oil to chopped vegetables and mix well.
6. Add castor sugar to tomato mixture and mix well. Remove from heat and bring down to room temperature.
7. Heat remaining olive oil in a non-stick grill pan. Place the chopped vegetable pieces and cook from both sides till grill marks appear. Transfer on a plate.
8. Coarsely grind the tomato mixture.
9. Heat a non-stick tawa. Drizzle some oil and wipe it with a kitchen towel to lightly grease. Sprinkle some water and wipe again with a kitchen towel.
10. Put ladleful of dosa batter in the center of hot tawa and spread using the back of the ladle to make semi-thin large disc and cook from one side till ½ done. Lightly scrape out the excess batter on the above layer to make it thin.
11. Drizzle some melted butter, spread some tomato chutney and some mozzarella cheese on top. Place some grilled vegetables, onion slices, cherry tomatoes and black olives and spread some more mozzarella cheese on top.
12. Drizzle some melted butter on the sides of the pizza dosa, cover and cook till the cheese melts. Transfer on the worktop. Similarly, prepare with remaining batter and ingredients.
13. Garnish with few basil leaves, cut into wedges and serve hot.
