Parantha topped with all the usual pizza condiments and loads of cheese making it absolutely delicious.

PIZZA PARANTHA

Ingredients

Ready-made dough made with 2 cups of whole wheat flour
Whole wheat flour for dusting
8 tbsps pizza sauce
2 cups grated mozzarella cheese
1 cup chopped coloured capsicums
½ cup sweet corn kernels, boiled
Salt to taste
2 tsps dried mixed herbs
Crushed black peppercorns taste
12-14 pickled jalapenos slices
18-20 black olive slices
Ghee as required

Method

1. Divide the dough into 8 equal portions and shape them into balls. Dust the worktop with flour and roll each portion into a thin roti and set aside.
2. For one portion, heat a non-stick tawa, place the prepared roti on it, cook for 30 seconds. Flip and cook the other side for 1-2 minutes and take it off the heat.
3. Place another roti on the same tawa and cook for 30 seconds, flip and cook the other side till completely cooked.
4. Flip and apply pizza sauce, apply 2 tbsps pizza sauce, sprinkle grated mozzarella cheese, sprinkle mixed colour capsicums, and sweet corn kernels. Sprinkle salt, mixed herbs dried, crushed black peppercorns,
5. Place a few jalapenos and a few black olives, sprinkle a little mozzarella cheese on top and cook the roti for 2-3 minutes on low flame.
6. Place another roti with the uncooked side on top and gently press it. Apply ghee and flip. Apply a little ghee and cook till the base is cooked completely.
7. Flip and cook for 30 seconds and take it off the heat. Cut into wedges and serve hot
