PIZZA PARANTHAIngredientsReady-made dough made with 2 cups of whole wheat flourWhole wheat flour for dusting8 tbsps pizza sauce2 cups grated mozzarella cheese1 cup chopped coloured capsicums½ cup sweet corn kernels, boiledSalt to taste2 tsps dried mixed herbsCrushed black peppercorns taste12-14 pickled jalapenos slices18-20 black olive slicesGhee as requiredMethod1. Divide the dough into 8 equal portions and shape them into balls. Dust the worktop with flour and roll each portion into a thin roti and set aside.2. For one portion, heat a non-stick tawa, place the prepared roti on it, cook for 30 seconds. Flip and cook the other side for 1-2 minutes and take it off the heat.3. Place another roti on the same tawa and cook for 30 seconds, flip and cook the other side till completely cooked.4. Flip and apply pizza sauce, apply 2 tbsps pizza sauce, sprinkle grated mozzarella cheese, sprinkle mixed colour capsicums, and sweet corn kernels. Sprinkle salt, mixed herbs dried, crushed black peppercorns, 5. Place a few jalapenos and a few black olives, sprinkle a little mozzarella cheese on top and cook the roti for 2-3 minutes on low flame. 6. Place another roti with the uncooked side on top and gently press it. Apply ghee and flip. Apply a little ghee and cook till the base is cooked completely. 7. Flip and cook for 30 seconds and take it off the heat.
