Crispy cutlets prepared with the goodness of poha can be a perfect snack to serve to your loved ones.

POHA CUTLET

Ingredients

¼ cup thin pressed rice (poha)
3-4 raw bananas, steamed, peeled and mashed
1 tbsp white sesame seeds
1 tbsp roasted and crushed peanuts
1 medium carrot, grated
2 tbsps chopped fresh coriander leaves
1-2 green chillies, finely chopped
Salt to taste
Juice of ½ lemon
Oil for shallow-frying
½ cup breadcrumbs

Method

1. Take pressed rice in a bowl. Add 2-3 tbsps water and soak for 2 minutes.
2. Dry-roast sesame seeds in a non-stick pan till golden. Transfer in another bowl, add peanuts, carrot, bananas, coriander leaves, green chillies and soaked pressed rice.
3. Heat another non-stick pan.
4. Add salt and lemon juice to banana mixture and mix well.
5. Add some oil to hot pan.
6. Divide the prepared mixture into equal portions and shape them into cutlets.
7. Coat the cutlets with breadcrumbs and shallow-fry in hot oil till golden and crisp from both sides. Drain on absorbent paper.
8. Serve hot.
