You've never had a sandwich quite like this before.INGREDIENTS:Pork Meatball:1 lb ground porkSalt, to tastePepper, to taste3 Tbsp garlic, minced2 green onions, sliced6 basil leaves, chopped thin2 Tbsp fish sauce½ Tbsp sugar1 Tbsp white sesame seeds1 Tbsp (or more to taste) hot chili sauce, such as Sriracha½ Tbsp cornstarch, or more if needed to bind1 Tbsp molassesPickled vegetable topping:1 ½ cups green cabbage, chopped⅔ cup grated carrots½ cup grated daikon½ cup leafed Brussels sprouts1 large shiitake mushroom, thinly sliced½ Tbsp sugarSalt, to tastePepper, to taste2 Tbsp rice vinegarSpam pâté:1 can of low-sodium Spam4 heaping Tbsp garlic aioli2 Tbsp garlic chili sauce, like Sambal1 green onion, choppedFor assembly:French baguetteSrirachaSTEPS:1.) Combine all ingredients for the meatballs in a large bowl. Work with your hands to make sure everything is well incorporated. Set aside to marinate while you prepare the rest of your banh mi filling.2.) Combine everything for the pickled vegetable topping in a bowl and give it a toss. Set aside to break down and pickle.3.) Combine all Spam pâté ingredients in a food processor and blend until smooth.4.) Preheat oven to 350°F. Heat a large cast-iron skillet over medium-high heat with oil. Begin forming golf-ball-sized meatballs and add to the pan, browning on all sides. Once browned all over, pop pan into the oven for 15 minutes to finish cooking.5.) To assemble, cut French baguette down the center. Spread a healthy portion of pâté and squirt with Sriracha. Fill with meatballs and top with pickled vegetables.
