Ingredients:
5 medium-sized boiled potatoes (cut into cubes)
Capsicum- 2medium cut into thick pieces
2 medium sized chopped onion
1 big grated tomato
½ tsp Red chilly powder
¾ tsp Coriander powder
Salt as needed
¼ tsp turmeric powder
¼ tsp Garam masala
½ tsp Grated ginger
Kasturi methi
Chopped Coriander leaves
For tempering:
½ tsp Cumin seed
Oil 2tbsp
How to make:
1) Slice Onion lengthwise and dice Capsicum.
2) Heat oil in a pan, add cumin seed when it sizzles add onion, capsicum and mixes it well.
3) Sauté both the veggies on medium flame and cook till the onion gets translucent and Capsicum gets slightly cooked.
4) To make the cooking fast at this time cover the lid for 2 minutes. Do not overcook capsicum make it little crunchy.
5) Open the lid and add cubed potatoes, grated tomato and mix it well.
6) Add ginger, red chilly powder, turmeric powder, mango powder, salt, garam masala, Coriander powder, kasuri methi, chopped coriander leaves and little water. Mix well.
. 7) Add 1/4 cup water and let mixture cook over medium flame.
8) Cook for a minute and make a thick gravy. Turn off the heat and transfer to a serving bowl.
9) It can be served with tandoori roti, chapati, butter naan or steamed rice for lunch or dinner.
