POTATO PIE RECIPE

In this episode, I'd like to share with you, one of my favorite potato recipes. I don't make this dish very often, but when I do we just love to eat it. Easy to prepare using a few ingredients, and so yummy. You can serve it with almost everything. Or serve as a main dish with a salad on the side, whatever your heart desires!

INGREDIENTS
1 1/2 kg. (3 pounds) potato
1 small onion
4 eggs
1/2 cup cream
2 heaping teaspoon fine breadcrumbs
2 heaping teaspoon starch (I use wheat starch)
A tiny pinch of nutmeg (optional)
Salt & pepper
Olive oil
Chives to garnish

DIRECTIONS
Beat the eggs in a big bowl.
Add 1 1/2 tsp or to taste salt and a good pinch of black pepper.
Add cream, beat again.
Add breadcrumbs, mix.
Add starch and beat gently first, then beat well.
Grate a tiny pinch of nutmeg on top, mix and set aside.
Peel the onion.
Peel the potatoes, chop coarsely and soak in cold water to prevent discoloration.
Grease a medium size baking dish well, and transfer into the cold oven.
My dish is 23x18 cm. (9x7 inches)
Preheat oven to 180C. (356F)
Chop the onion coarsely and puree in a blender.
Using a cheese cloth, squeeze out the extra liquid.
Transfer onion into the egg mixture and mix.
Working in batches, repeat the same with potatoes, puree in a blender.
Then squeeze out the extra liquid.
Transfer into the egg mixture, mix.
Repeat the same until all is done.
Using an oven glove, remove baking dish from oven and pour the batter.
Spread and smooth the top.
Drizzle with some olive oil, spread using a brush.
Bake for about 55-60 minutes, or until nicely browned.
Then let cool for 10 minutes, over a wire rack.
Loosen the edges with a knife then slice.
Garnish with some finely chopped chives.
Using a spatula, transfer into a serving plate and enjoy.
