Prawn and Eggplant fried rice is an wholesome rice preparation where aromatic basmati rice is nicely tossed in a spicy mix of succulent pieces of prawn, eggplant and other spices cooked together.

Ingredients:
Shrimp 250 g
Eggplant 150 g
Rice 1 cups
Pepper corns 5 n
Ghee 2 tb
Bay leaves 2 n
Whole garam masala (each) 2 n
Onions 2 n
Salt
Green chilly 3 n
Chopped coriander 1 b
Grated coconut ½ c
Ginger garlic paste 1 tb
Turmeric ¼ ts
Chilly paste 1 tbs
Garam masala powder 1 tb
Coconut milk 3 tb

Method:

Heat ghee in a pan add pepper corns, bay leaves, whole garam masala, onions, salt, sauté it and cook onions till golden colour, add green chilly, chopped coriander, grated coconut, ginger garlic paste, turmeric, mix it well, and coriander powder, eggplant cook this for few minutes in a slow flame, after that add shrimp, chilly paste, garam masala powder, coconut milk, put the lid on, cook it for 5 minutes, after that add cooked rice, toss it and put the lid on cook it for a minute in a slow flame, switch off the flame, add chopped coriander, squeeze lemon juice.
