Prawn Couscous Jollof

PREP TIME: 15 MINUTES
COOK TIME: 20 MINUTES
SERVES:4-6

INGREDIENTS:
2 cups couscous
100g prawns, deveined
5 medium tomatoes
1tbsp Cayenne pepper powder
1small Onion, slices
4 cloves of garlic, minced.
1 tsp thyme
1 tsp nutmeg
3 tbsp egetable oil
Salt.

DIRECTION:
Heat vegetable oil in a saucepan over medium heat.
Add thyme, onion, garlic, stir and let sweat for a minute.
Add chopped tomatoes, stir and let simmer down then add cayenne pepper powder, nutmeg and salt.
Add prawns , stir and let simmer for a minute then add 100ml water, cover and let boil for 2 minutes
Take out the prawns, set aside then add the couscous, stir, cover and reduce heat to low.
Allow to cook for 3 minutes, add back the prawns, stir in and let cook for 2 minutes.
Prawns couscous jollof ready. Serve with sauted Brussels sprout.
