PREP TIME: 15 MINUTESCOOK TIME: 20 MINUTESSERVES:4-6 INGREDIENTS:2 cups couscous100g prawns, deveined 5 medium tomatoes1tbsp Cayenne pepper powder1small Onion, slices4 cloves of garlic, minced.1 tsp thyme1 tsp nutmeg3 tbsp egetable oilSalt. DIRECTION: Heat vegetable oil in a saucepan over medium heat. Add thyme, onion, garlic, stir and let sweat for a minute. Add chopped tomatoes, stir and let simmer down then add cayenne pepper powder, nutmeg and salt. Add prawns , stir and let simmer for a minute then add 100ml water, cover and let boil for 2 minutes Take out the prawns, set aside then add the couscous, stir, cover and reduce heat to low. Allow to cook for 3 minutes, add back the prawns, stir in and let cook for 2 minutes. Prawns couscous jollof ready. Serve with sauted Brussels sprout.
