Pomfret stuffed with spicy prawns mixture cooked in chutney masala, shallow fried.PRAWN STUFFED POMFRETIngredients1 cup medium prawns, cleaned and deveined4-6 pomfrets, cleaned and slit3-4 tablespoons oil + for shallow-fryingSalt to taste½ teaspoon turmeric powder1½ tablespoons ginger-garlic pasteJuice of 1 lemon2 medium onions, finely chopped6-8 tablespoons green chutney1 teaspoon sugar½ cup rice flourMethod1. Heat 3-4 tablespoons oil in a non-stick pan.2. Take fish onto a plate. Add salt, turmeric powder, ½ tablespoon ginger-garlic paste and juice of ½ lemonon the fish and rub well. Set aside to marinate.3. Roughly chop prawns.4. Add onion to the pan and sauté till golden. Add remaining ginger-garlic paste, mix and sauté for a minute. 5. Add 3 tablespoons green chutney, mix and cook for a minute. Add sugar and mix well. Add chopped prawns, mix and cook for 2 minutes. Switch off heat, add salt and remaining lemon juice and mix well. Set aside to cool.6. Spread 1 tablespoon green chutney over each marinated fish and fill in some prepared prawn mixture. Tie each stuffed fish with a thread.7. Put remaining green chutney over the stuffed fish and spread evenly.8. Take rice flour on a plate. Add salt and mix well. Coat each stuffed fish with rice flour mixture.9. Heat some oil in another non-stick pan. Place the slit side of fish on it and shallow-fry till golden and crisp from both sides.10.
